Ballard Lingonberry Bars


  • ¾ cup butter
  • 1 cup brown sugar (packed)
  • 1-1/2 cups all-purpose flour
  • ½ tsp. baking soda
  • ¾ tsp. salt
  • 1-1/2 cups quick-cooking oats
  • 1 (10 oz) jar of Scandinavian Delights Lingonberry jam


Step 1: Pre-heat oven to 400.

Step 2: Make the batter

Lingon2Beat butter and brown sugar together until creamy.  Pre-mix flour with soda, salt and oats.  Gradually add flour mixture to butter, mix well to crumbly consistency.


Step 3: Assembly

Lingon3Take half of the crumb mixture and press it into a greased 13 x 9 pyrex baking dish. Spread the entire jar of Lingonberry jam evenly over crumb mixture.  Sprinkle the remaining half of the crumb mixture over the jam.Lingon4


Step 3: Bake

Bake at 400* for 20 minutes.  Cool completely before cutting into bars.  Makes about 32  – 2-in. bars, or one gynormous one at midnight with just you and a cup of decaf.  Hypothetically speaking, of course. 😮
